khandvi : Gujarati Snack Recipe



Khandvi is a yummy Gujarati dish. It is traditional and very simple to make.

Ingredients

  • Yoghurt (dahi) – 1/2 cup
  • Besen -1 cup
  • Salt – 1 tsp
  • Turmeric powder -1/4 tsp
  • water – 1 & 1/2 cup
  • Oil -1 tbsp
  • Mustard seeds – 1/2 tsp
  • Pepper powder – 1/4 tsp
  • coconut, grated – 2 tbsp
  • Coriander leaves, chopped -3 tbsp
  • Green chillies, chopped – to taste
  • Asafoetida(Hing) – 2 pinch

Method

First we  prepare the better for khandvi, take yogurt (dahi) in a saucepan. Add besen, salt,1 pinch of  hing & haldi powder in to it. Mix all the ingredients together. Pouring water while mixing constantly to get a smooth better of pouring consistency. Now place the saucepan on a high flame. Cook while stirring continuously till  the mixture begins  to leave the sides of the pan. Place the prepared mixture immediately on the marbled kitchen counter or on the back of a thali. Spread evenly using a palette knife or a spatula in to very thin sheets ,allow it to dry for about 2 minutes. Now heat oil in a tadka pan, add mustard seeds & black pepper to it. Mix well and sprinkle it over the besen layer. Cut the besen layers in to broad strips .Gently roll each strip in to a khandvi. Serve warm, garnish with grated coconut, chopped coriender & green chillies.
